The Perfect Thanksgiving Side Dish

Erin Lynch at @Platingsandpairings has come up with this wonderful healthy side dish for your Thanksgiving table and suggests the Jules Taylor Sauvignon Blanc or The Jules Rosé as ideal to enjoy with it!
You know Jules loves a delicious, tasty, healthy salad as a side dish, and this one has everything - crunchiness, zestiness, herby flavours and a touch of spicy heat from the jalapenos! It can be made up to a day ahead of time which we love - making the drinking and chatting the focus on the day! The lime juice prevents the ingredients browning. Erin also gives great recommendations for substitutions to keep things flexible if you can't track exactly the right thing down.
Ingredients:
Apples / Celery Root / Red Onion / Apple Cider Vinegar / Jalapeno / Cilantro or parsley / Lime Juice / Canola Oil / Poppy Seeds
Instructions:
Make quick pickled onions by placing the vinegar, sugar and salt in a bowl and adding thinly sliced red onion, massage well and leave at least 30 minutes to pickle.
Make the Slaw: Peel and grate or julienne the celery root and core and finely slice the apples. Mix and coat with lime juice to prevent browning. Add the onions and their pickling liquids, minced jalapeno, and cilantro. Toss to combine and top with poppy seeds.
