Paige Creates A Spring Crostini Ritual to Celebrate Jules' 25th Vintage
US wine blogger Paige Comrie of Wine with Paige has been reaching for our Marlborough Sauvignon Blanc for years — it's the bottle she keeps coming back to, and the one she recommends to anyone who'll listen.
This spring, ahead of Sauvignon Blanc Day, she poured a glass of Jules' 2025 Sauvignon Blanc, her 25th vintage, and built an entire ritual around it: crostini, fig jam, mascarpone, prosciutto, and thyme straight from her garden.
Here's how she put it:
"The only Sauvignon Blanc pairing you need this spring is Jules Taylor's 2025 Sauvignon Blanc, her 25th vintage. Twenty-five years of making the wine better every time — I think that deserves a proper moment, so I made one.
Spring crostinis, fig jam, mascarpone, prosciutto and thyme from my garden. Nothing complicated, just the kind of thing that makes an ordinary afternoon feel intentional.
The wine is bright and citrussy with this beautiful herbaceous quality that makes the fig and the prosciutto sing. It's one of those pairings that just makes sense.
This is what I mean when I talk about everyday magic. It doesn't have to be big, it just has to be intentional."


The Pairing, Broken Down
Nothing fussy about this one — that's kind of the point. Here's what went into Paige's crostini:
- Baguette or sourdough, sliced into crostini, brushed with olive oil and then toasted.
- Mascarpone
- Fig jam
- Wholegrain mustard
- Prosciutto
- Fresh thyme (hers came straight from the garden)
Layer the mascarpone first, then fig jam, mustard and a ribbon of prosciutto, and finish with a scattering of thyme. It just takes minutes, but it turns a sip into a moment to savour.
Why It Works
Jules' Sauvignon Blanc is bright and citrussy with a slightly herbaceous edge — and that's what makes this pairing sing. The citrus cuts through the richness of the mascarpone and the salt of the prosciutto, while the wine's herbal note sits right alongside the fresh thyme instead of competing with it. The fig adds a touch of sweetness that the acidity of the wine is just waiting to play off.
It's a pairing that makes sense on paper but is even better in the glass.

The timing wasn't an accident. The 2025 vintage marked 25 years since Jules started this label with a handful of cases and a backup plan (If the wine didn't sell, she and her family were planning on a very boozy Christmas...)
